Prendre les precaucions habituals per reduir els riscos (per exemple, disminuir els l\u00edpids insaturats a la dieta) no ser\u00e0 suficient per evitar totalment l&#8217;estr\u00e8s oxidatiu. Els \u00e0cids grassos insaturats tenen virtuts, els animals de granja tenen un metabolisme molt elevat i produeixen radicals lliures. Per tant, caldr\u00e0 rec\u00f3rrer als antioxidants.   <\/p>\n<p style=\"text-align: justify;\">Aix\u00f2 planteja una pregunta: per qu\u00e8 escollir un antioxidant en comptes d&#8217;un altre? No tractarem aqu\u00ed l&#8217;estrat\u00e8gia de protecci\u00f3 dels pinsos com a complement de la dels animals. La q\u00fcesti\u00f3 que queda \u00e9s comparar l&#8217;efic\u00e0cia d&#8217;un producte en lloc d&#8217;un altre en una aplicaci\u00f3 determinada.  <\/p>\n<\/div>\n<div data-hook=\"rcv-block5\"><\/div>\n<div data-breakout=\"normal\">\n<h2 id=\"viewer-8hnir\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\"><span class=\"vsfWl MqvCC\">Antioxidants: Els diferents m\u00e8todes anal\u00edtics per estimar l&#8217;efic\u00e0cia<\/span><\/h2>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block7\">Un dels criteris presentats pels fabricants d&#8217;additius per a pinsos \u00e9s l&#8217;efic\u00e0cia comparativa del seu producte davant de la vitamina E. Per\u00f2 cadasc\u00fa t\u00e9 el seu propi m\u00e8tode. Tot i que el m\u00e8tode ORAC sembla la refer\u00e8ncia, no sempre s&#8217;utilitza de la mateixa manera. <\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block8\"><\/div>\n<div style=\"text-align: justify;\" data-breakout=\"normal\">\n<div id=\"viewer-a8ege\" class=\"Is4xI aaZkV rIsue QMtOy\" dir=\"auto\"><strong>Hi ha 2 grans fam\u00edlies de m\u00e8todes anal\u00edtics disponibles<\/strong><\/div>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block11\">Tots els m\u00e8todes per analitzar el poder antioxidant d&#8217;un producte es basen en una reacci\u00f3 d&#8217;oxidaci\u00f3-reducci\u00f3 in vitro.<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block13\">Un exemple de reacci\u00f3 \u00e9s la oxidaci\u00f3 del H<sub>2<\/sub> pel fluor: H<sub>2<\/sub> + F<sub>2<\/sub> \u2192 2 HF<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block14\"><\/div>\n<div style=\"text-align: justify;\" data-breakout=\"normal\">\n<div id=\"viewer-59pm1\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\">Sempre es tracta de mesurar directament o indirectament la desaparici\u00f3 o aparici\u00f3 d\u2019un dels compostos en la reacci\u00f3. Existeixen dues grans fam\u00edlies de classificaci\u00f3 del poder antioxidant d\u2019un producte: <\/div>\n<\/div>\n<div data-breakout=\"normal\">\n<ul class=\"QOI7n rIsue\">\n<li class=\"B229E\" dir=\"auto\" style=\"text-align: justify;\" aria-level=\"1\">\n<p id=\"viewer-e9k80\" class=\"Is4xI aaZkV rIsue QMtOy\" dir=\"\"><span class=\"vsfWl\">M\u00e8todes basats en la transfer\u00e8ncia delectrons: Folin, TEAC<\/span><\/p>\n<\/li>\n<li class=\"B229E\" dir=\"auto\" aria-level=\"1\">\n<p id=\"viewer-d7pde\" class=\"Is4xI aaZkV rIsue QMtOy\" dir=\"\" style=\"text-align: justify;\"><span class=\"vsfWl\">M\u00e8todes basats en la transfer\u00e8ncia de H: ORAC, Photochem<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<h2 data-hook=\"rcv-block17\">Quin m\u00e8tode es pot triar?<\/h2>\n<div data-hook=\"rcv-block20\">\n<p style=\"text-align: justify;\">Els m\u00e8todes basats en la transfer\u00e8ncia delectrons no tenen en compte el nombre delectrons que poden aportar els antioxidants. Per tant, els resultats no s\u00f3n fiables quan es comparen dos productes. Tot i aix\u00f2, continuen sent \u00fatils per al control de qualitat d&#8217;un determinat producte per tal de comprovar la seva conformitat amb les especificacions.  <\/p>\n<p style=\"text-align: justify;\">Els m\u00e8todes basats en la transfer\u00e8ncia d&#8217;hidrogen s\u00f3n certament m\u00e9s fiables, per\u00f2 continuen sent te\u00f2rics perqu\u00e8 el producte analitzat sempre est\u00e0 en exc\u00e9s per garantir que la reacci\u00f3 qu\u00edmica sigui tan completa com sigui possible. Aquesta situaci\u00f3 dista molt de ser representativa del que passa in vivo. <\/p>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block22\"><\/div>\n<div data-breakout=\"normal\">\n<p class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\" style=\"text-align: justify;\"><span class=\"vsfWl MqvCC\">El m\u00e8tode fotoqu\u00edmic utilitza la desaparici\u00f3 d\u2019un radical molt present a les c\u00e8l\u00b7lules:<br \/>: <\/span>O<sup>-2<\/sup><span class=\"vsfWl MqvCC\">. El m\u00e8tode ORAC utilitza una dosificaci\u00f3 indirecta d\u2019un radical sint\u00e8tic. Aquest m\u00e8tode \u00e9s, per tant, menys directe i menys representatiu del metabolisme. <\/span><\/p>\n<\/div>\n<div data-hook=\"rcv-block24\"><\/div>\n<div data-breakout=\"normal\">\n<h2 id=\"viewer-cq7ht\" class=\"Is4xI aaZkV rIsue QMtOy\" dir=\"auto\"><span class=\"vsfWl\">La import\u00e0ncia dels dissolvents utilitzats<\/span><\/h2>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block26\">El m\u00e8tode ORAC \u00e9s el m\u00e9s reconegut. No obstant aix\u00f2, hi ha moltes variants d&#8217;aquest m\u00e8tode, que resulten una mica pertorbadores per al joc. Cal solubilitzar el producte, per a aix\u00f2 el m\u00e8tode ORAC ofereix una variant per als productes hidrosolubles i una altra per als liposolubles. Per als productes liposolubles, hi ha tantes variants com dissolvents adequats. Mentre que el TROLOX (Vitamina E hidrosoluble) \u00e9s sempre la refer\u00e8ncia, lelecci\u00f3 del dissolvent t\u00e9 una gran influ\u00e8ncia en el resultat obtingut.    <\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block26\"><\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block26\">El m\u00e8tode Photochem \u00e9s una refer\u00e8ncia molt menys emprada que el m\u00e8tode ORAC. D&#8217;altra banda, est\u00e0 obert a m\u00e9s tipus de dissolvents, com ara els alcohols, per exemple. Tots aquests m\u00e8todes tenen en com\u00fa que comparen la capacitat d&#8217;un antioxidant amb la de TROLOX. Aix\u00f2 no \u00e9s pas possible perqu\u00e8 les proporcions entre els antioxidants i la vitamina E canvien no nom\u00e9s d&#8217;un m\u00e8tode a un altre, sin\u00f3 tamb\u00e9 d&#8217;un dissolvent a un altre. Per tant, \u00e9s il\u00b7lusori comparar-los en termes absoluts. Aquests m\u00e8todes no estan fets per aix\u00f2.   <\/div>\n<div data-hook=\"rcv-block35\"><\/div>\n<div data-breakout=\"normal\">\n<h2 id=\"viewer-6gbrl\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\"><span class=\"vsfWl MqvCC\">M\u00e8todes anal\u00edtics per verificar la conformitat dels productes<\/span><\/h2>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block37\">D&#8217;altra banda, aquests m\u00e8todes continuen sent especialment \u00fatils per comprovar que un producte compleix les especificacions en relaci\u00f3 amb un m\u00e8tode determinat. En efecte, els antioxidants s\u00f3n per naturalesa inestables i es degraden amb el temps. La determinaci\u00f3 de la data de caducitat i de la qualitat ha d&#8217;anar seguida d&#8217;un pla de control estricte. En aquest cas, sempre s&#8217;utilitzar\u00e0 el mateix protocol i els resultats seran comparables.   <\/div>\n<div data-hook=\"rcv-block38\"><\/div>\n<div data-breakout=\"normal\">\n<h2 id=\"viewer-2fo3l\" class=\"Is4xI aaZkV rIsue QMtOy\" dir=\"auto\">Qu\u00e8 passa amb el mode dacci\u00f3 dels antioxidants en tot aix\u00f2?<\/h2>\n<\/div>\n<div style=\"text-align: justify;\" data-hook=\"rcv-block41\">A m\u00e9s, si necessitem diversos m\u00e8todes diferents per mesurar el poder dels antioxidants de diferents productes, \u00e9s tamb\u00e9 perqu\u00e8 el mecanisme d&#8217;acci\u00f3 i l&#8217;entorn on actuaran s\u00f3n diferents. Per aix\u00f2, \u00e9s millor cercar la complementarietat, com a m\u00ednim, una orientaci\u00f3 del producte sobre els problemes de l&#8217;animal. Per exemple, preferir un antioxidant a base de curcumina per a un problema amb repercussions inflamat\u00f2ries o m\u00e9s aviat procianidines de ra\u00efm per reduir els radicals lliures intestinals. Finalment, nom\u00e9s l&#8217;animal ens pot dir quina \u00e9s la dosi efica\u00e7 per a un problema determinat.   <\/div>\n<div data-hook=\"rcv-block42\"><\/div>\n<div data-breakout=\"normal\">\n<h2 id=\"viewer-2g365\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\"><span class=\"vsfWl MqvCC\">Conclusi\u00f3<\/span><\/h2>\n<\/div>\n<div data-breakout=\"normal\">\n<p id=\"viewer-di4lr\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\" style=\"text-align: justify;\"><span class=\"vsfWl MqvCC\">Tots aquests m\u00e8todes in vitro tenen qualitats diferents per\u00f2 els mateixos defectes:<\/span><\/p>\n<\/div>\n<div style=\"text-align: justify;\" data-breakout=\"normal\">\n<ul class=\"QOI7n rIsue\">\n<li class=\"B229E\" dir=\"auto\" aria-level=\"1\">\n<p id=\"viewer-d4jf0\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"\"><span class=\"vsfWl MqvCC\">L&#8217;antioxidant provat est\u00e0 en exc\u00e9s per al bon curs de la reacci\u00f3 redox mentre que a la natura \u00e9s el contrari.<\/span><\/p>\n<\/li>\n<li class=\"B229E\" dir=\"auto\" aria-level=\"1\">\n<p id=\"viewer-cn193\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"\"><span class=\"vsfWl MqvCC\">Cap daquests m\u00e8todes t\u00e9 en compte la biodisponibilitat dun actiu.<\/span><\/p>\n<\/li>\n<\/ul>\n<\/div>\n<div data-breakout=\"normal\">\n<p id=\"viewer-emjgc\" class=\"Is4xI aaZkV MqvCC QMtOy\" dir=\"auto\" style=\"text-align: justify;\"><span class=\"vsfWl MqvCC\">Aix\u00ed que el millor m\u00e8tode \u00e9s \u201cpreguntar a l&#8217;animal qu\u00e8 pensa\u201d. La variabilitat en dissolvents emprats, especialment en ORAC i Photochem, afegeix complexitat i biaix a les comparatives. En resum, encara que els m\u00e8todes anal\u00edtics resultin \u00fatils per assegurar la conformitat dels productes, no permeten equiparar-ne l\u2019efic\u00e0cia en termes absoluts.
