La seva pres\u00e8ncia en nombroses esp\u00e8cies vegetals i la diversitat de les seves estructures qu\u00edmiques han despertat un gran inter\u00e8s pel seu possible paper en diferents processos fisiol\u00f2gics.<\/p>\n

Tanmateix, parlar dels polifenols<\/em> com si fossin un \u00fanic compost pot resultar engany\u00f3s. En realitat, constitueixen una de les fam\u00edlies de metab\u00f2lits vegetals m\u00e9s \u00e0mplies i heterog\u00e8nies descrites fins ara.<\/p>\n

Qu\u00e8 s\u00f3n els polifenols?<\/h2>\n

Els polifenols s\u00f3n compostos bioactius d\u2019origen vegetal<\/strong> caracteritzats per la pres\u00e8ncia d\u2019un o diversos grups fen\u00f2lics en la seva estructura qu\u00edmica. Les plantes els sintetitzen com a part del seu metabolisme secundari i exerceixen funcions relacionades amb la protecci\u00f3 davant de factors ambientals, pat\u00f2gens i estr\u00e8s.<\/p>\n

Actualment s\u2019han identificat m\u00e9s de 8.000 compostos fen\u00f2lics<\/strong>, agrupats en diferents fam\u00edlies amb estructures i propietats molt diverses.<\/p>\n

Una fam\u00edlia molt diversa<\/h2>\n

Tot i que existeixen diferents classificacions, els principals grups de polifenols inclouen:<\/p>\n
